Grandma’s Quick Refrigerator Pickles
Who doesn’t like fresh cucumbers out of the garden? I have a couple of extra cucumbers from the garden and thought these refrigerator pickles would make for a nice treat for my parents when visiting over the weekend. These pickles are a favorite of my mom's, and I know she’ll be thrilled to have a jar.
My grandmother had a batch of these in the fridge at all times in the hot summer months. As an adult, I now know why. This simple recipe comes together in minutes and is a refreshing side dish for any meal.
The recipe is not complicated and can be changed depending on what you are in the mood for. Don’t have cucumbers? I’ve used peppers, radishes and tomatoes. Want something with more flavor? Add garlic, dill or red pepper flakes.

The Recipe: Quick Refrigerator Pickles
Ingredients:
1 Cup Water
1/3 Cup Vinegar
2 Tablespoons Sugar
1 Teaspoon Salt
2 Cups Cucumber, sliced
1/2 Cup Thinly Sliced Onion
1 Teaspoon Coarse Ground Pepper
Instructions:
In a small bowl, combine cold water, vinegar, sugar, salt and pepper. Stir until the sugar and salt dissolve.
Taste the mixture and adjust the ingredients to your liking. The beauty of this recipe is its flexibility – you can tweak it to suit your personal taste.
Add your sliced cucumbers and onions to a bowl or mason jar and cover with the brine. Your cucumbers should be submerged. If they are not, make more brine.
Let the mixture rest in the fridge until you’re ready to eat. I find that letting them sit for a day before eating allows the flavors to develop.
