Celebrating Family Traditions with Potatiskorv
Mother's Day is a special time to celebrate and cherish moments with family. This year, I visited home to enjoy our beloved tradition of making Potatis Skorv, or Swedish potato sausage. For generations, this dish has been a centerpiece of our family gatherings, bringing us closer with each bite.
Potatiskorv, also known as potatiskorv or värmlandskorv, originates from the Värmland region of Sweden. This delicious and hearty sausage is made from a blend of pork, beef, potatoes, onions, and a unique mix of spices. Its preparation is a labor of love, often involving the whole family in the process. We hand stuff the sausage into natural casings using an heirloom hand crank stuffer from the early 1800s, adding a touch of history to each link. This year, we made an impressive 70 pounds of sausage. While I personally do not eat pork, I still cherish these moments. I made myself some mouth-watering tomato burgers while everyone else savored their "Scorv." Our family’s recipe for tomato burgers is similar to the potatiscorv, but it doesn’t include the pork. You flatten the mixture into patties and then cook it in tomato sauce.
The recipe for our Potatiskorv is a closely guarded family secret, passed down from one generation to the next. It’s more than just a dish; it’s a symbol of our heritage and the bonds that tie us together. The ritual of gathering in the kitchen, sharing stories, and working side by side is what truly makes this tradition special. This year we were sad that our grandparents could not help out, but we are looking forward to seeing them next time.
